How To Cook Roasted Pumpkin With Tomatoes, Cheese And Garlic - Recipe

Required products :

  • about 1 kg of pumpkin (peeled and cleaned of seeds, cut into pieces)
  • 1-2 cloves of garlic
  • 1/2 chili pepper
  • 3-4 dried tomatoes in oil (finely chopped)
  • 3-4 tablespoons of fat from dried tomatoes
  • 1-2 medium fresh tomatoes
  • 2 teaspoons liquid honey
  • 2 tablespoons breadcrumbs
  • 2-3 tablespoons grated cheese
  • pinch of salt

Method of preparation :

Preheat oven to 200 degrees.

Mix the tomato oil with the crushed garlic, chopped chili pepper, pieces of sun-dried tomatoes and add salt. In this combination, dip the pumpkin slices and arrange them in a suitable tray.

Cut the fresh tomatoes into 6-8 pieces and fill the empty spaces between the pumpkin pieces with them.

Sprinkle with breadcrumbs, sprinkle with liquid honey, finish with grated cheese.

Bake in the oven for 40 minutes.

 

The finished dish has an interesting taste, combining sweet, spicy and spicy, which in turn complement the otherwise more or less neutral pumpkin. The breadcrumbs on the surface form a thin crispy crust after baking.
