Required products :

  • 600 grams of potatoes
  • 1 teaspoon of mustard seeds and cumin
  • 2 tablespoons sunflower oil
  • 1 teaspoon garam masala (Indian spice mix)
  • 1/2 teaspoon turmeric
  • 1 medium red onion
  • 1 yellow pepper
  • 1 red pepper
  • 1 orange pepper
  • 2 medium green zucchini
  • pepper

Method of preparation :

Peel and slice the potatoes.

Bring water to a boil on the stove and blanch the potatoes in it for 5 minutes.

Cut the onion into thin crescents. Heat a frying pan and roast the cumin and mustard seeds for 30 seconds. Then add the oil, garam masala and turmeric. Wait a few seconds and pour the onion.

Fry it for 1-2 minutes in the spices.

Drain the potatoes in a colander. Add them to the onion and season with black pepper. Stir occasionally and cook until the potatoes begin to acquire a light golden crust.

Transfer everything to a pan and bake for 30 minutes at 190 degrees.

Meanwhile, chop the peppers and zucchini.

Remove the pan from the oven and add the vegetables, return to the oven for another 25-30 minutes until the potatoes are golden brown and the vegetables are soft.
