How To Cook Roasted Zucchini Salad With Parsley, Pine Nuts And Parmesan - Recipe

Required products :

  • 2 medium-sized zucchini, thinly sliced ​​lengthwise
  • walnut oil
  • salt and pepper to taste
  • 1 tablespoon Dijon mustard
  • 1/4 tea cup freshly squeezed lemon juice
  • 1 teaspoon finely grated lemon peel
  • 1 tablespoon liquid honey
  • 2 tablespoons fresh parsley, finely chopped
  • 1/2 cup cold pressed olive oil

For garnish :

  • parmesan
  • toasted pine nuts
  • fresh mint leaves

Method of preparation :

  • Heat a grill pan over medium heat.
  • Grease the zucchini with walnut oil on both sides and season with salt and pepper to taste.
  • Bake in the pan for no more than 1 minute on each side and transfer them to a plate.
  • In a small bowl, combine the Dijon mustard, lemon juice, grated lemon peel, honey, parsley and olive oil.
  • Stir and season with salt and pepper to taste.
  • Sprinkle the roasted zucchini with the dressing and let them stand at room temperature for 15 minutes.
