Required products :

  • 4 small zucchini
  • 2 cans of 400 grams of finely chopped tomatoes
  • canned 400 grams of white beans
  • 1 onion, finely chopped
  • 2 teaspoons Harissa paste
  • 2 crushed garlic cloves
  • 2 teaspoons cumin
  • 3 tablespoons olive oil
  • 75 grams of panko breadcrumbs, plain or ground dry bread
  • fresh coriander or parsley to sprinkle at the end

Method of preparation :

Turn the oven to 200 degrees (180 if you use a fan).

Place two skewers on both sides of the zucchini and cut the vegetables into slices. The skewers act as a limiter so that you don't cut the zucchini down.

Stir in the tomatoes, onions, beans and half of the harissa and garlic paste and pour into a pan.

Put the zucchini on top.

In a bowl, mix the remaining harissa paste, 2 tablespoons olive oil and cumin.

Spread the marinade over the zucchini and bake for 30-35 minutes.

Mix the remaining olive oil and garlic with the breadcrumbs. After 30-35 minutes, sprinkle the dish with aromatic crumbs and bake for another 10 minutes.

Serve with coriander or parsley.
