Necessary products

For swamps:

  • 4 eggs
  • 100 grams of sugar

  • 100 milliliters of champagne
  • 425 grams of confectionery whipping cream
  • 200 grams of raspberries

For decoration:

  • fresh raspberries
  • mint leaves

 

Method of preparation :

The dough

Beat the egg whites with 30 grams of sugar, and the yolks with 2-3 tablespoons of hot water and the remaining sugar.

Combine them, add the flour, starch, baking powder and cocoa (sift them beforehand). Mix and spread the dough evenly in a pan covered with a sheet of parchment. Bake at 200 degrees in the oven for 10-12 minutes.

Remove the finished tray on a towel, remove the paper and with the help of the fabric roll a roll, which is left to cool.

 

Cream

Pour the gelatin according to the instructions on the package. Add the sugar to the yolks and beat in a water bath.
