Necessary products

For the dough:

4 proteins

5 egg yolks

4 tablespoons sugar

6 tablespoons flour

1 tablespoon starch

2 tablespoons cocoa powder

2 tablespoons boiling water

pinch of salt

 

For cream:

150 grams of white chocolate

200 grams of cottage cheese

75 grams of butter

1 teaspoon lemon juice

 

For the glaze:

50 grams of dark chocolate

100 milliliters of skim cream

 

Method of preparation :

Beat the egg whites with 2 tablespoons of sugar for about 7-8 minutes. Mix the yolks with the remaining sugar and beat until white. In a separate bowl, dissolve the cocoa in the hot water. You should get a thick mixture, which you add to the yolks and mix well. Mix the flour, salt, starch and sift everything together, then pour over the yolks. Add the egg whites in portions, mix until smooth. Stir gently to keep air out of the dough. Pour it into a pan lined with baking paper and bake in an oven preheated to 180 degrees. About 10 minutes is enough. It is important that the marsh does not become dry, because when winding the roll it will break. When baked, cover with a towel and roll up a roll.

Make a cream. Melt the white chocolate in a water bath (the water should not boil). Cool it and mix with the curd. Add the softened butter, lemon juice to the cream and continue stirring until a smooth mass is obtained.
