Required products :

  • 1 teaspoon flour
  • 3/4 tea cup wholemeal rye flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon powder
  • 1 1/4 teaspoon salt
  • 4 eggs
  • 1/2 teaspoon olive oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond oil
  • 3/4 cup buttermilk (or
  • 3/4 tea cup brown sugar
  • 1/2 cup fig jam (with ground fruit)
  • 1/3 tea cup sliced ​​almonds
  • 2 teaspoons raw sugar

Method of preparation :

Preheat the oven to 180 degrees and grease a small rectangular loaf pan with baking paper, then grease the paper with plenty of oil.

Using a wooden spoon, mix the two types of flour with the baking powder, cinnamon and salt.

Mix the eggs, olive oil and vanilla with a whisk. Add the almond flour and stir again until the ingredients are completely mixed.

Add the brown sugar and buttermilk and stir again to combine. Pour the flour into the liquid mixture and mix with a spatula.

Put half of the dough in the pan and spread half of the fig jam on top. Pass a knife through the dough several times to mix better with the jam. Top with the remaining mixture and pour the remaining jam. Repaint the surface with a knife.

Mix 2 tablespoons of sugar with the sliced ​​almonds and sprinkle with the cake.

Bake until swollen and browned, about 50-60 minutes. Check with a stick if it is well baked.

Once the cake is ready, take it out of the mold and place it on a wire rack so that it can cool evenly.

Cut when completely cool so that it does not become sticky.
