It doesn't take much preparation to make a Brussels sprout salad. In combination with toasted almonds, parmesan and pomegranate seeds, it is a great choice for any occasion and especially for your festive dinner.

In a medium bowl, combine olive oil, lemon juice, parsley, salt and pepper.
salad:
Add the thinly sliced Brussels sprouts to the bowl and stir to flavor the salad. Leave to stand for 20 minutes to 4 hours, stirring occasionally.
Serve by adding almonds and pomegranate seeds, and garnish with grated Parmesan cheese.
