Necessary products:

 

  • 550 grams of raw chickpeas
  • 2 bay leaves
  • 3 large eggs
  • 2 tablespoons wholemeal flour
  • 1 teaspoon baking powder
  • 4 cloves garlic
  • 2 teaspoons olive oil
  • 1 teaspoon fennel seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon smoked paprika
  • peel of one lemon
  • 1 stalk fresh parsley
  • 1 leaf of fresh mint
  • salt, pepper and chili

 

Method of preparation:

 

Soak the chickpeas and boil it. Add bay leaf with boiling water and add salt. Strain, cool and grind in a blender.

In a bowl, beat the eggs, pour olive oil, add chickpeas, lemon zest, fresh parsley leaves, mint and stir. In another bowl, sift the flour, add the seeds, baking powder, chopped garlic, red pepper, salt, pepper and chili.

Stir and combine the mixtures. Stir until the products are homogenous and pour the mixture into the oblong form lined with a sheet of rice paper. Preheat the oven to 170 degrees and bake the salted cake until done. Cool, cut and serve.
