Necessary products:

 

  • 2 zucchini
  • 2 eggs
  • lemon juice
  • 2-3 leaves of fresh basil
  • a few stalks of fresh onions
  • 100 grams of finely chopped spinach
  • 1 teaspoon wholemeal flour
  • 5 grams of baking powder
  • salt and pepper
  • olive oil

 

Method of preparation:

 

Preheat the oven to 200 degrees, prepare a form for 12 muffins and grease it with olive oil. Grate the zucchini, add salt and pepper. Drain them, add lemon juice, chopped basil leaves, fresh onions.

Beat the eggs and add the spinach. Stir, add flour and baking powder. Stir the mixture until homogeneous and cool for 30 minutes.

Using a spoon, scoop, distribute one in each mold and bake for 30 minutes. Cool, remove and serve, garnished with yogurt or sour cream.
