How To Cook Sandwich With Mashed Peas, Sardines And Fennel - Recipe

Sandwich with creamy puree of peas, mint and fennel with sardines or anchovies, served as a warm appetizer or mainly for lunch or dinner.

Required products :

  • 2 cups fresh peas (or frozen)
  • 1 cup sliced ​​leaves
  • 1/2 cup extra virgin olive oil
  • 1/2 pack fresh mint
  • 1 stalk of green garlic or onion, cut into circles
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 slices wholemeal bread cut in half
  • 1 tablespoon extra virgin olive oil + 2 teaspoons
  • 2 lemons
  • 1 small fennel head, thinly sliced
  • salt and pepper to taste
  • 12 sardines (and / or anchovies)
  • 1/4 cup fresh mint leaves, chopped

* A tea cup is used to measure the quantities.

Method of preparation :

Boil the peas in boiling water until soft (about 2-4 minutes), then transfer to a bowl of ice water for 1-2 minutes and drain in a colander. Blend the peas with the fennel leaves, olive oil, mint, a clove of green garlic or onion, lemon juice, salt and pepper until smooth.

Place the oven rack on the top row and heat to a high temperature.

Place the slices of wholemeal bread on baking paper and spread them on both sides with 1 tablespoon of olive oil. Bake in the oven until browned and crispy for about 2 minutes per side.

Squeeze the juice of 1 lemon and mix with the thinly sliced ​​fennel, 2 teaspoons of olive oil, salt and pepper to taste.

Spread the baked slices with the pea puree, garnish with the flavored fennel, sardines (and / or anchovies) and mint leaves. Serve the sandwich with lemon slices as desired.
