Wash the fillet, dry it with a paper towel and cut each piece into two parts. Season with salt and pepper to taste.
Pour 1/2 tea cup of flour into a deep plate, beat the egg in a bowl and add the mustard and milk. In another deep bowl, mix the remaining flour and ground walnuts.
Roll the fillet first in the flour, then dip in the egg mixture and finally in the walnut mixture.
