Heat olive oil in a saucepan and fry the carrots, onions, tomatoes, potatoes and beans. Pour the broth and season with salt, black and red pepper to taste.
Stir and wait for the mixture to boil, then reduce the heat. Season the soup with savory, fresh parsley and celery.
Cook for 25-30 minutes and cool. Distribute in bowls and serve warm. Optionally, garnish with freshly squeezed lemon juice.
