How To Cook Soups For Weight Loss: Cream Soup Of Carrots And Ginger - Recipe

Required products :

  • 2 kilograms of carrots, peeled and sliced
  • 1 potato, peeled and sliced
  • 1 teaspoon chopped sweet onion
  • 1 tablespoon crushed garlic
  • 2 tablespoons fresh ginger, ground
  • 6 tea cups homemade chicken or vegetable broth
  • 1/4 tea cup raw pumpkin seeds, peeled
  • 1 1/3 tea cup yogurt
  • 1 teaspoon honey
  • 1 teaspoon fresh thyme
  • freshly ground black pepper
  • coarse salt
  • 2 tablespoons cold pressed olive oil

Method of preparation :

  • In a deep saucepan, sauté the onions in olive oil over medium-high heat.
  • Sprinkle with 1/2 teaspoon of salt and cook for about 10 minutes, stirring constantly, until the onions begin to caramelize.
  • Add the garlic and ginger, stir and cook for another 2 minutes, but be careful not to burn the mixture.
  • Add the carrots, potatoes and broth.
  • Let the soup simmer under a lid for about 20-25 minutes until the carrots and potatoes are fully cooked.
  • In a small bowl, mix the yogurt, honey, thyme and 1/2 teaspoon of black pepper.
  • Mash the soup smoothly and season it with salt and pepper to taste.
  • Serve it warm, garnished with flavored yogurt. If desired, you can sprinkle it with peeled pumpkin or pine nuts and fresh parsley.
