How To Cook Soups For Weight Loss: Soup With Red Lentils And Tomatoes - Recipe

Required products :

  • 2 tea cups red lentils
  • 2 teaspoons chopped onion
  • 2 tea cups chopped celery
  • 800 grams of canned tomatoes
  • 6 tea cups skim chicken broth / or vegetables /
  • 4 cloves garlic
  • 1 teaspoon freshly chopped parsley
  • 1 tea glass of red wine / dry /
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon cloves
  • 1/4 tea cup of balsamic / or wine / vinegar
  • 1 tablespoon olive oil

Method of preparation :

 

  • In a large soup pot, saute onions and celery in olive oil for about 10 minutes.
  • Puree the tomatoes in a blender or food processor and add them to the vegetables.
  • Add the broth and lentils to them.
  • After the soup boils, reduce the heat and simmer uncovered for about 20 minutes, stirring occasionally.
  • Add 1/2 teaspoon parsley, wine, garlic, black pepper, salt and cloves. Stir well and let the soup simmer for another 25 minutes.
  • Pour the rest of the parsley and balsamic vinegar into the pan and simmer for another 5 minutes.
  • Serve the warm soup with multigrain bread.

Note!

Optionally, you could slice the tomatoes instead of pureing them.
