How To Cook Soups For Weight Loss: Soup With Three Types Of Beans - Recipe

Required products :

  • 2 red peppers, finely chopped
  • 4 cloves garlic, roasted and crushed
  • 2 tea cups pumpkin, cut into cubes
  • 1 large sweet onion, chopped
  • 3 medium-sized carrots, peeled and sliced
  • 800 grams of canned tomatoes
  • 400 grams of canned Pinto beans, rinsed and drained
  • 400 grams of canned black beans, rinsed and drained
  • 400 grams of canned red beans, rinsed and drained
  • 450 milliliters of vegetable broth, homemade
  • 3 tablespoons olive oil, cold pressed
  • 1 tablespoon cumin
  • 2 tablespoons paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 bay leaves
  • fresh parsley for sprinkling

Method of preparation :

  • In a deep bowl, mix the peppers, garlic, onion, pumpkin, carrots, olive oil and spices (excluding the bay leaves).
  • Stir well to taste and bake on foil in a preheated 220 degree oven for about 15 minutes until lightly caramelized. When ready, lightly crush the garlic.
  • While the vegetables are in the oven, in a deep saucepan, mix the three types of beans, vegetable broth, tomatoes and bay leaf.
  • Allow them to simmer and add the vegetable mixture that you have mashed in advance.
  • Stir in the soup and simmer for about 20 minutes to mix all the flavors.
  • Remove the bay leaves, serve in a bowl and sprinkle with fresh parsley.
