Required products :

  • 4 potatoes
  • salt to taste
  • 1 1/2 - 2 teaspoons olive oil (for frying)
  • 1 can of tomato sauce (400 grams)
  • 1 1/2 teaspoon mustard
  • 1 teaspoon Tabasco sauce (or other chili sauce)
  • 1 teaspoon sweet red pepper
  • 1 teaspoon wine vinegar

Method of preparation :

Peel the potatoes and cut them in half, then once more in half lengthwise and cut into irregular cubes (about 3-4 pieces of each quarter).

Season the potatoes with plenty of salt, according to your taste.

Heat olive oil in a deep pan to cover about 2 inches from the bottom. When the fat is hot enough, put some of the potatoes. They should start frying immediately, if not enough warm olive oil, the potatoes will absorb too much fat and become soft and greasy.

Fry the vegetables for about 10 minutes until golden (fry according to how fried you like the potatoes).

When they are ready, transfer them with a slotted spoon on a plate lined with paper to drain off excess fat.

In a small saucepan put 1-2 tablespoons of olive oil. Once warm, add the tomato sauce and simmer for 5 minutes. Reduce the heat and add the mustard to the tomatoes. Followed by hot sauce, red pepper. Mix well and season to taste (with salt and more chili sauce, if desired).

Serve the potato flights with tomato sauce. Serve with toothpicks instead of utensils.
