Required products :

1 kg of carrots

1/2 cup brown sugar

2 tablespoons salt

2 teaspoons hot red pepper

1/2 teaspoon ground cloves

1.5 teaspoons unrefined mustard oil

4 tablespoons mustard seeds

1/2 teaspoon grated nutmeg

1/2 teaspoon ground cardamom

Method of preparation :

Cut the carrots into large cubes or into thick strips 4 - 5 cm long. Pour them into boiling water for 1 minute, then remove and leave to dry for about an hour (you can expose to the sun or put in the oven at low temperature - 60 - 100 degrees).

In a bowl, mix the nutmeg, cloves, cardamom, pepper, salt and sugar. Add the carrots and stir. Pour everything into a sterilized glass jar.

Put the butter in a suitable dish, add the mustard seeds and put on low heat. When it starts to "smoke", remove from the heat and leave for 3-4 minutes to cool. Then pour into the jar and close with a lid.

It should stand 13-14 days in the light and shake the jar well 2-3 times a day.

You can serve the finished carrots as an appetizer or a side dish to meat.
