Necessary products:

340 g chicken breast

2 tablespoons olive oil

1 medium red onion (about 170 g), finely chopped

1 tbsp flour

1.5 liters of chicken broth

2 tsp tomato juice (500 ml)

400 g canned corn (drain the liquid)

2 red chili peppers (finely chopped and without seeds) or chili paste

1/4 cup fresh coriander leaves (parsley)

Method of preparation:

Fry the chicken breasts in half of the olive oil until cooked. When the meat cools, cut into pieces. Fry the onion in the remaining olive oil until soft. Add the flour and leave the mixture on the hob until it starts to thicken and form bubbles. Gradually add the broth and tomato juice. Let it cook until thickened and until the mixture boils. Then add the corn, chicken and peppers. Before serving, sprinkle with chopped coriander (if you prefer, maybe parsley).
