Required products :

  • 2 tablespoons fine brown sugar
  • 2 teaspoons chili pepper flakes
  • 1 teaspoon fresh thyme (finely chopped)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper (ground)


For the sweet glaze:

  • 1 1/2 teaspoon apple juice
  • 2 tablespoons honey or maple syrup
  • 2 teaspoons mustard seeds
  • peel of half an orange
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1 tablespoon cognac or whiskey

 

  • 1 kg pork fillet (with bone)

 

Method of preparation :

First, deal with the glaze. Pour the apple juice into a suitable bowl with a thick bottom, add the maple syrup or honey, mustard, grated orange peel, red pepper flakes, add salt and pour a tablespoon of cognac or whiskey. Put on the stove and cook for 15-20 minutes, stirring constantly. Some of the liquid will evaporate and the mixture will thicken.

Preheat oven to 220 degrees or preheat grill pan.

In a bowl, mix the brown sugar with 2 teaspoons of chili pepper flakes, finely chopped fresh thyme, garlic powder, salt and pepper.

Cut the meat into pieces about 3 centimeters thick, wash and dry. Rub with the dry aromatic combination of spices and arrange on a hot grill pan or in an oiled pan if you are going to use the oven.

Spread half of the glaze on the surface, cover with foil and bake for 15-20 minutes. Then remove the coating, turn the meat, pour the remaining glaze and bake (another 15-20 minutes).

If you are going to cook in a pan, put the meat in it and gradually pour the glaze over it. Turn the steaks once.

Serve with rice or fresh vegetable salad.
