Required products :

  • 200 grams of beans of your choice
  • 400 grams of pork
  • 1 tablespoon flour
  • 1 large onion
  • 1 stalk of celery
  • 1 medium hot pepper
  • 5 cloves garlic
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 400 grams of canned tomatoes in their own juice
  • 1.5 liters of meat or chicken broth
  • salt to taste
  • avocado to serve as desired

 

Method of preparation :

Fill the beans with cold water overnight. Then change the water and boil it until ready.

Finely chop the onion, celery and hot pepper.

Cut the meat into chunks, put them in a bowl, sprinkle with flour and stir so that each piece can be covered with it.

Heat 2 tablespoons oil in a thick-bottomed pan, fry until golden brown (about 5 minutes) and remove to a plate.

Reduce heat to medium and pour onion and celery in the same bowl. Fry them for about 5 minutes, stirring, then return the meat to the pan. Add the mashed tomatoes with the juice, pour the broth, add salt to taste and bring to a boil.

When this happens, reduce the temperature to a minimum and let the dish cook until the meat softens.

5 minutes before removing from the heat, add the cooked beans and hot peppers, and finally the crushed garlic cloves and spices.

Serve with diced avocado, if desired, an interesting combination is obtained.
