Heat olive oil in a pan, add the flour and stir vigorously for a minute. Then put the thinly sliced spinach in the bowl, mix thoroughly and cook for 1 minute. Then pour 1/2 teaspoon of water, add salt and wait for the mixture to boil. Reduce heat to low and cook for 5 minutes.
Beat the egg with the yoghurt, add the chopped parsley and, stirring constantly, pour the mixture into the spinach bowl. Bring the porridge to a boil once more and immediately remove from the heat.
Grate the cheese / yellow cheese and sprinkle it on the dish after distributing the portions on a plate.
