Fry the garlic in olive oil for about a minute (until the specific aroma appears). Pour about 6 cups of water into a saucepan. When the water boils, pour the cornflour, beating constantly. Reduce heat to medium and cook for about 8 minutes, until the consistency thickens slightly. Add parmesan and garlic oil. Allow the soup to simmer for about a minute, stirring. Then add spinach and salt to taste. Let everything cook for about a minute, until the spinach acquires a bright green color.
Divide the soup into bowls and put a little olive oil in each, season with pepper and serve with a slice of lemon.
