Fry the bacon in a pan without adding fat. Once crispy, add olive oil and onion. Fry until the vegetables are soft. Add the garlic cloves and cook until they release their aroma.
Add the tomato puree and simmer for 2 minutes.
Put the minced meat and crush it with a spatula. Fry it until ready, then pour the red wine and let the alcohol boil. Add the canned tomatoes, cream and season with salt, pepper and sugar. Bring the sauce to a boil, then reduce the temperature and simmer for 30 minutes. (Add a little water if needed).
Remove the prepared sauce from the hob and allow to cool completely.
Preheat oven to 180 degrees and cover tray with falling bottom with parchment paper.
Take the lasagna skins, put a thin slice of mozzarella on each and spread the sauce. Roll the first one into a roll, and roll it into the next crust and continue until you have finished all the crusts and get one big roll.
Put the lasagna in a pan and pour the béchamel sauce over it. Sprinkle with the grated mozzarella and parmesan.
Bake for 40 minutes, covered with foil, then remove and bake for another 5 minutes until a crispy crust forms from the cheese.
