Necessary products

For the pudding:

  • 700 grams of ready-made sponge cake
  • 8 slices of white bread
  • 10 eggs (large) + 5 yolks
  • 900 milliliters of high-fat liquid cream
  • 1/2 teaspoon vanilla extract

For the caramel cream:

  • 1.5 teaspoons brown sugar
  • 120 grams of butter
  • 1/4 tea glass of whiskey or cognac
  • 1/2 teaspoon cream (liquid) with high fat content
  • 2 teaspoons vanilla extract
  • 2 cups powdered sugar

 

Method of preparation :

Before you start making the pudding, turn on the oven to heat to 160 degrees.

Beat the whole eggs with the five yolks and sugar.

Heat the liquid cream (for the pudding) to a medium temperature. Then, beating constantly, slowly add it to the egg mixture. Add the vanilla extract and mix until smooth.

In a large bowl, break the sponge cake and slices of bread into large pieces. Drizzle with the cream-egg combination you prepared and stir until the filling is absorbed.

Transfer to a rectangular pan (measuring 22 x 32 cm) and bake until done (check with a toothpick when you take it out of the dough dry, so it is baked). It will take about 50-60 minutes.

Once you take the pudding out of the oven, wait for it to cool, while making the caramel sauce.

Mix the brown sugar with the butter and whiskey. Pour in the liquid cream, vanilla extract and cook, stirring until the sweet crystals dissolve. Let the cream cool completely.

When this happens, transfer it to a bowl, add the powdered sugar and beat with a mixer until homogeneous (about a minute).

Cover the pudding with the delicious cream and serve.
