Necessary products:

 

  • 80 grams of butter
  • 1 teaspoon sugar
  • 40 grams of flour
  • 1 and 1/2 tea cups of fresh milk
  • peel and juice of one lemon
  • 3 eggs, separated
  • 1 pinch of salt

 

Method of preparation:

 

Preheat oven to 170 degrees. In a bowl, mix the butter with the sugar, flour, salt, juice and lemon zest. In another bowl, beat the yolks and pour the milk. Combine the two mixtures.

Beat the egg whites and carefully add to the cream. Distribute it in fireproof bowls and arrange them in a tray half full of cold water. Bake for 45 minutes without cooling the water bath.

The goal is for the consistency of the dessert to be porous. Cool, turn and serve the soufflés, topped with icing of your choice.
