Preheat oven to 170 degrees. In a bowl, mix the butter with the sugar, flour, salt, juice and lemon zest. In another bowl, beat the yolks and pour the milk. Combine the two mixtures.
Beat the egg whites and carefully add to the cream. Distribute it in fireproof bowls and arrange them in a tray half full of cold water. Bake for 45 minutes without cooling the water bath.
