How To Cook Squid Salad With Avocado, Croutons And Yellow Cheese - Recipe

Required products (for 2 servings) :

  • 150 grams of lettuce leaves
  • 60 grams of white bread without crusts
  • 1 avocado
  • 200 grams of squid
  • clove garlic
  • 50 grams of yellow cheese
  • left

For the dressing:

  • 8 tablespoons oil
  • 1 tablespoon lemon juice
  • 2 tablespoons orange juice
  • 1 tablespoon sour cream or thick liquid
  • 1/4 teaspoon mustard
  • 1/2 teaspoon ground red pepper
  • salt, sugar, ground black pepper to taste

 

Method of preparation :

Pour the oil into a bowl (it is best to use olive oil), add the crushed garlic clove and leave the mixture for about an hour.

 

Meanwhile, prepare the bread for the croutons by removing the crusts from the slices and cutting the soft part into small cubes. Chop lettuce leaves, boil squid.

 

If you use frozen squid, defrost them first, and this should be done in the refrigerator. Cut them into circles and put for 1-2 minutes in boiling water. If they are hard, let them cook until soft.

 

Strain the oil, remove the garlic, separate 2 tablespoons of the fat for the croutons, and mix the rest with the lemon juice, 1/2 teaspoon of salt, a pinch of sugar and a little black pepper.

In this combination, dip the squid while still warm, stir and leave for 20 minutes.

Meanwhile, fry the bread cubes in 1 tablespoon of garlic oil. After a minute, turn to the other side and pour the second spoonful of fat. Add salt and transfer to the oven preheated to 100 degrees. This will dry the croutons even more and make them crispier.

 

Peel an avocado, remove the stone and cut the floor into thin slices.

 

Make the dressing. Remove the squid from the marinade and add 2 tablespoons of orange juice, cream, mustard and spices.

Spread two plates with dressing, spread the shredded or chopped lettuce leaves, on them - dressing, followed by some squid and croutons, again a little sauce.

 

It's time for the pieces of avocado, pour the dressing, sprinkle with grated yellow cheese.

 

Make the second portion in the same way.
