How To Cook Squid Skewers With Fish And Grilled Vegetables Garnish - Recipe

Required products :

  • 4 peeled and cleaned squid
  • 1 small stack of salmon
  • olives
  • 3 tablespoons olive oil
  • 1 teaspoon vinegar (white wine)
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Provencal spices
  • 1 teaspoon sugar
  • 2 tablespoons lemon juice
  • 1 zucchini
  • 1 eggplant
  • 2 sweet peppers (1 yellow and 1 red)
  • 2 red onions

 

Method of preparation :

Remove the skin of the fish, divide the stack into two parts.

Make the marinade from olive oil, two vinegars, lemon juice, sugar, salt and Provencal spices. Spread the salmon and squid with it, leave for an hour.

 

During this time, deal with the garnish.

Cut the zucchini, onion, pepper and eggplant into circles, fry them on both sides without fat in a grill pan.

 

Take them out in a bowl, add salt and olive oil.

Cut the squid into 4 long strips and the fish into small cubes.

 

Wrap a piece of steak in squid and string the bites on skewers, alternating with olives.

 

Fry them on all sides for one minute, if you prefer, turn the skewers for another 60 seconds.

Serve them on a bed of grilled vegetables.
