Required products :
1 medium sized chicken
200 grams roasted almonds
2 onions
400 grams prunes
2 tablespoons sugar
1 tablespoon butter
1 tablespoon oil
1/2 tablespoon honey
pinch ground cinnamon
1 teaspoon sesame seeds
1 teaspoon grated lemon peel
2 pinch white pepper
pinch grated ginger
pinch grated nutmeg
pinch saffron
pinch ground bay leaf
salt to taste
green spices optional
Method of preparation :
Cut the chicken into portions.
Heat in a suitable oil and butter, add saffron, chicken, chopped onion. Add salt to taste and add all the spices except cinnamon and nutmeg. Let the meat simmer over medium heat for 30 minutes, pouring a little water 15 minutes after cooking.
Boil prunes in 250 milliliters of water.
Make a syrup by dissolving honey and sugar in warm water. Dip the plums in the sweet liquid briefly, then add them to the chicken (5 minutes before removing the dish from the heat), and pour a little of the syrup. At the same time add the almonds, grated lemon peel, sesame seeds.
Before serving, sprinkle with a pinch of cinnamon and as much nutmeg.
Optionally, add chopped fresh green spices.
You can serve the dish with a garnish of boiled rice.
