How To Cook Stewed Chicken With Pumpkin, Beans And Tomatoes - Recipe

Required products :

1 kg chicken fillet
1 tablespoon oil
1 onion
1 red sweet pepper
1 clove garlic
1.5 teaspoons chicken broth
500 grams tomatoes
1 tablespoon ground red pepper
1 medium pumpkin
400 grams green beans
450 grams canned white beans
1 tablespoon corn starch
50 grams of peanut butter
salt and pepper to taste

 

Method of preparation :

Peel a squash, grate it and cut it into small cubes.

Cut the fillet, pepper and tomatoes into cubes, onion into quarters and mash the garlic. Cut the green bean pods in half.

Heat the oil over medium heat in a large saucepan in which you put the chicken. Season to taste and fry for 4-5 minutes until golden brown.

Reduce the heat to medium and pour the onion and pepper into the bowl. After about 4-5 minutes (when the pepper softens) pour 1 teaspoon of salted broth, add the tomatoes and red pepper. Once the mixture boils, add the pumpkin and garlic, beans and green beans.

Reduce heat, close the pan with a lid and let the dish simmer for about 20 minutes or until the pumpkin and fillet soften.

Meanwhile, dissolve the starch in the remaining broth and add the peanut butter. Stir until a homogeneous sauce is obtained, which you pour over the chicken at the end of cooking. Two minutes later (or when the sauce thickens) remove the pan from the heat.
