How To Cook Stewed Chicken With Roasted Zucchini In Tomato Sauce - Recipe

Required products :

500 grams chicken legs
500 grams zucchini
1 onion
1 sweet pepper
3 ripe tomatoes
2 cloves garlic
1/2 bunch parsley
1 tablespoon tomato paste
1/4 teaspoon turmeric
1/2 teaspoon ground red pepper
1/4 teaspoon cumin
1 / 4 teaspoon ground black pepper
3 tablespoons oil
salt to taste

Method of preparation :

Wash the legs, dry them and fry in hot oil for 2-3 minutes on both sides until golden. Remove to a plate.

Chop the onion, pepper and garlic very finely. Boil the tomatoes for 30 seconds in boiling water and peel them. Cut the meat into small pieces as well.

In the fat in which you fried the legs, put onions and garlic, let them cook until soft. Then add the peppers, tomatoes, parsley, tomato paste and let the vegetables simmer on the stove until a thick sauce is obtained.

 

Put the legs in the sauce, pour water to cover them completely, add the spices, reduce the heat and let the dish simmer for 25 minutes.

 

Meanwhile, cut the zucchini into large pieces.

 

Bake them in a greased grill pan until browned.

 

Then cut them into smaller pieces, add salt and add to the dish with the legs and sauce.

 

 

 

Stir gently and let everything simmer for another 15-20 minutes. Do not close the container with a lid. Stir if necessary, but be very careful not to mash the zucchini.

 

Serve the dish with your favorite garnish.
