Necessary products:

 

  • 200 grams of boiled lentils
  • 500 milliliters of chicken broth
  • 2 quails
  • 1 onion
  • 3 cloves garlic
  • 1/2 red pepper
  • 1/2 green pepper
  • 4 potatoes
  • 1 bay leaf
  • 1 tablespoon flour
  • 50 milliliters of white wine
  • saffron on the tip of a knife
  • fresh parsley
  • salt, pepper and olive oil to taste

 

Method of preparation:


Heat olive oil and fry finely chopped onions, potatoes, garlic cloves, peppers. Stew briefly and add white wine, lentils and bay leaves. Season with saffron, salt and pepper to taste.

Mix the chicken broth with the flour, pour over the dish and simmer on low heat for 15 minutes. During this time, wash, dry and fry the quail. Cool and fill them with some of the filling.

Pour the rest of the mixture into a yen dish with a lid, put the birds and cover. Preheat oven to 200 degrees and simmer until done. Serve the dish warm, garnished with finely chopped parsley.
