Necessary products:

 

  • 1 kg of rabbit meat
  • 2 tablespoons oil
  • 1 cinnamon stick
  • 2 onions
  • 1 red pepper
  • 2 cloves garlic
  • 100 grams of dried apricots
  • 50 grams of sliced ​​almonds
  • 1 teaspoon cumin
  • 1 tablespoon honey
  • 100 grams of couscous for cooking
  • 125 milliliters of chicken broth
  • 20 grams of butter
  • fresh parsley and salt

 

Method of preparation:

 

Preheat oven to 180 degrees. Mix the oil with the chopped garlic and spread on the rabbit meat. Heat the butter, fry the onion, cinnamon stick and add the finely chopped pepper.

Remove the cinnamon, add the apricots, almonds, cumin and honey. Stir, add the rabbit meat, part of the broth and stew the mixture for 20 minutes. Pour it into a casserole and bake the dish for 120 minutes.

Meanwhile, pour the broth into another bowl, add the couscous and bring to the boil. Season with chopped fresh parsley and salt. When ready, serve the dish garnished with seasoned couscous and enjoy it.
