Required products :
1 kg of zucchini
3 tomatoes
1 onion
1 red pepper
1 small hot pepper
3 cloves garlic
100 grams of yellow cheese
3 eggs
salt to taste
frying oil
meat or sausage if desired
Method of preparation :
Wash and clean the vegetables. Cut the tomatoes into large pieces, put them in a pan greased with a little oil, close the lid. Let the tomatoes release their juice, you will stew the other vegetables in it. Meanwhile, cut the zucchini into small pieces. When the tomatoes are ready, add them to them. After 5 minutes, add the chopped red pepper. Stew everything for 7 - 10 minutes under a lid and add the onion. It is no longer necessary to close the container so that some of the water can evaporate. When the onion turns red, add the hot pepper, then the chopped garlic. When the liquid evaporates, add the beaten eggs and close with a lid. Let the stove work at a minimum temperature for about 5 minutes and then pour the grated yellow cheese. You can use melted cheese instead of yellow cheese. Let the dish simmer, until the cheese is melted. Bake if desired.
You can experiment and put minced meat or sausages instead of eggs, for example (or some sausage or pieces of meat). But rest assured that with vegetables alone it is tasty enough.
