Required products :

For the strawberry sauce :

  • 4 tea cups chopped strawberries
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 2 tablespoons cornstarch

For honey cookies :

  • 1 1/2 teaspoons flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 60 grams of cold unsalted butter, cut into large pieces
  • 1/4 tea cup of honey
  • 1/4 tea whipped cream, cold

About the topping :

  • 1/2 tea whipped cream, cold
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract

Method of preparation :

 

  • Preheat oven to 180 degrees.
  • In a large bowl, combine the strawberries, lemon juice, honey and cornstarch.
  • Stir and pour the mixture into a round pan with a diameter of about 23 centimeters.
  • In a large bowl, mix the flour, baking powder and salt.
  • Add the butter and rub it with your fingers into the dry ingredients until large crumbs form.
  • Add honey and cream and stir with a wooden spoon.
  • Divide the dough into 7-8 equal parts, form round biscuits and spread them on the strawberry mixture.
  • Bake the cake for about 30-35 minutes, until the biscuits turn golden brown and the strawberry sauce begins to simmer.
  • Allow the cobbler to cool for at least 15 minutes before serving.
  • Meanwhile, prepare the cream topping by beating the ingredients with a mixer until the stirrers begin to form soft but stable tips.
  • Serve the strawberry cake, garnished with honey cream.
