How To Cook Stuffed Artichoke With Sausage And Peppers - Recipe

Required products :

  • 4 pieces of spicy raw sausages (use only the inside)
  • 2 red peppers - finely chopped
  • 1 cup red onion, chopped
  • 4 cloves garlic, pressed
  • 3/4 cup panko breadcrumbs
  • 1/2 cup fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 4 artichokes
  • 3 tablespoons lemon juice
  • 1/2 teaspoon water
  • 1 tablespoon oil

Method of preparation :

For the filling, fry the sausage, crushing it, until ready. Pour the excess fat out of the pan.

Add the peppers and onions. Cook for about 10 minutes, stirring occasionally.

Add the garlic and remove from the heat a minute later. Add the breadcrumbs, parsley and parmesan.

Cut the artichoke stalks so that the vegetables are straight. Cut about 2-3 inches from the top of the artichoke to remove the sharp edges of the leaves.

Smear the cut parts with lemon juice.

Remove part of the inside with a spoon and spread the leaves with your hands. Fill the artichokes by placing the stuffing and between the leaves.

Mix the water with the remaining lemon juice and place in a pan. Place the artichokes on top and bake under foil on low heat for 20 minutes. Remove the foil and bake for a nice tan and serve.
