How To Cook Stuffed Baked Potatoes With Béchamel, Broccoli And Yellow Cheese - Recipe

Necessary products:

 

  • several large potatoes
  • 50 milliliters of olive oil
  • kosher salt
  • 150 grams of cooked broccoli
  • 20 grams of butter
  • 2 tablespoons flour
  • 150 milliliters of fresh milk
  • 100 grams of yogurt
  • 2 egg yolks
  • juice of half a lemon
  • salt, pepper, savory
  • 150 grams of grated cheddar

 

Method of preparation:

 

Wash and dry the potatoes without peeling them. Preheat the oven to 200 degrees, grease the potatoes with olive oil and sprinkle evenly with coarse salt.

 

Cover the oven with foil and place the vegetables to bake directly on the rack until the potatoes crack and dissolve.

 

Remove and cool. Make béchamel by heating the butter, add the flour and dilute with a mixture of yogurt, milk and lemon juice.

 

Stir until the mixture thickens and add the yolks.

 

Season the potatoes with salt, pepper and savory to taste.

 

Using a spoon, fill with béchamel, garnish with a few boiled broccoli and sprinkle with grated cheddar.

 

Arrange in a parchment-lined pan and bake again for 20 minutes. Cool, distribute portions and serve.
