How To Cook Stuffed Portobello Mushrooms With Sweet Potatoes - Recipe

Required products :

  • 4 large portobello mushrooms
  • 3 tablespoons extra virgin olive oil
  • salt and pepper to taste
  • 1 large sweet potato, peeled and diced
  • 1/4 tea cup of water
  • 1 large apple, peeled and chopped
  • 1 medium-sized red kamba, chopped
  • 1/2 onion shallot, chopped
  • 1 teaspoon spice for chicken
  • 1/2 cup walnuts, crushed in bulk
  • 1 tablespoon parsley, chopped

Method of preparation :

Preheat oven to 230 degrees. Cut the mushroom stumps into cubes.

Coat the inside of the mushrooms with 1 tablespoon of olive oil and season with salt and pepper to taste. Bake in a pan on baking paper for about 10-15 minutes or until the mushrooms are soft.

Heat 1 tablespoon olive oil in a pan over medium heat. Add the diced sweet potatoes and water, cover with a lid. Stir occasionally until cooked through. Then add 1 tablespoon olive oil, chopped stumps, apple, pepper, shallots and chicken seasoning, salt and pepper to taste. Cook, stirring, until vegetables are tender. Pour the crushed walnuts and parsley, stir and fill the mushrooms with the resulting mixture.

Garnish with parsley and serve.
