How To Cook Stuffed Pumpkin With Cream Cheese, Minced Meat And Cheese - Recipe

Necessary products for four servings:

 

  • 2 spaghetti pumpkins
  • 2 onions, peeled and finely chopped
  • 500 grams of minced beef
  • 1 teaspoon finely chopped tomatoes
  • 200 milliliters of tomato juice
  • salt, pepper and cumin to taste
  • 5 grams of red pepper
  • 300 grams of cream cheese
  • a few sprigs of fresh basil
  • a few sprigs of fresh parsley
  • 2 fresh mint leaves, finely chopped
  • 250 grams of grated mozzarella or yellow cheese
  • olive oil for frying

 

Method of preparation:

 

Cut the pumpkins into two parts and clean them. Scoop out the flesh with a spoon and set it aside. Heat olive oil in a pan and fry the onion and minced meat.

 

Season with salt, paprika, black pepper and cumin to taste. Add the tomatoes, pumpkin and tomato juice, stir and reduce the heat.

 

Cook over low heat until the liquid is reduced. In a bowl, mix the cream cheese with the basil, parsley and mint. Stir and distribute the mixture in the four halves of the vegetables.

 

Garnish with meat stuffing and sprinkle with yellow cheese.

 

Preheat the oven to 200 degrees, arrange the pumpkins with trays, pour about 250 milliliters of water in each and bake for 30 minutes. Cool, divide the dish into portions and serve.
