How To Cook Stuffed Pumpkin With Minced Meat And Beans - Recipe

Required products :

  • 1 small pumpkin of 1.3 kilograms
  • 2 tablespoons olive oil
  • 1 pinch of salt
  • 1/2 cup finely chopped onion
  • 1 clove garlic, chopped
  • 250 grams of minced beef
  • 1 cup boiled red beans
  • 1/2 cup chopped canned tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons hot red pepper
  • 1/2 teaspoon paprika, cumin, cinnamon
  • 1/2 teaspoon water
  • 220 grams of cream cheese
  • 2 teaspoons Monterey Jack cheese
  • Giant garlic for serving

Method of preparation :

Cut off the lid of the pumpkin and clean the inside.

Coat the inside of the pumpkin with 1 tablespoon of olive oil and sprinkle with a pinch of salt.

Bake for 20 minutes at 190 degrees until soft.

While the pumpkin is baking, prepare the filling: Heat the remaining olive oil and fry the onion and garlic in it for 2 minutes.

Add the minced meat and fry for 7-10 minutes until browned. Add the beans, tomatoes, tomato paste, spices and water. After 5 minutes, reduce the temperature and add the cream cheese and 1 teaspoon of Monterey Jack cheese. When the cheeses are melted, remove from the heat.

Fill the pumpkin with the filling, sprinkle with the remaining Monterey Jack cheese and bake for 2-4 minutes on the grill to toast the cheese and melt it.

Wait 5 minutes to cool and serve with various crackers or as a main course.
