How To Cook Stuffed Sweet Potatoes With Chickpeas And Tahini Sauce - Recipe

Required products :

  • 4 medium-sized sweet potatoes
  • 4 tablespoons olive oil
  • 2 cloves garlic, chopped
  • 1 small onion, chopped
  • 400 grams of canned chickpeas, drained
  • 75 grams of baby spinach
  • 1 small bunch of dill, chopped
  • peel and juice of 1 lemon

for the sauce:

  • 60 grams of yogurt
  • 2 tablespoons tahini
  • 20 grams of roasted pine nuts
  • 110 grams of pomegranate seeds

Method of preparation :

Wrap each potato in foil and bake for 45 minutes in an oven preheated to 200 degrees. Make sure they are ready by stabbing with a skewer. Grill the potatoes for 3 minutes until their skin is slightly browned.

Heat 2 tablespoons olive oil and fry the garlic and onion, stirring often, until softened. Add chickpeas and spinach and stew until the spinach softens. Allow the mixture to cool and season with dill, olive oil, lemon zest and juice.

Mix yogurt and tahini and sprinkle with salt to taste.

Cut the potatoes in half lengthwise and fill each half with the chickpea mixture. Season with tahini sauce and yogurt. Garnish with pine nuts, pomegranate seeds and serve.
