How To Cook Stuffed Trout With Hazelnuts And Mushrooms In Smoked Bacon - Recipe

Required products :

  • about 600 grams of trout
  • 1 small hard pear
  • a handful of dried white mushrooms
  • a handful of peeled hazelnuts
  • medium bunch parsley
  • half a medium lemon
  • 5-6 thin long strips of smoked bacon
  • 1-2 tablespoons butter
  • pepper
  • left

 

Method of preparation :

Clean the fish, remove all unnecessary parts and bones. Add salt, sprinkle with ground black pepper and sprinkle with lemon juice.

Wait 10-15 minutes for it to absorb the flavors and aromas.

Pour a little water over the mushrooms for 1-2 hours. When they swell and soften, pierce and cut them.

Cut the walnuts very finely (almost turn into crumbs, you can grind). Peel a pear, grate it and cut it into small cubes. Finely chop the parsley.

Heat the butter in a pan and fry the mushrooms in it until ready. Then add the fruit cubes and fry for 2-3 minutes, stirring constantly.

Then pour the hazelnuts, parsley, stir again, season and allow the mixture to cool to warm.

Once this is done, fill the fish with it, which you carefully wrap in the strips of bacon.

Bake in a preheated oven to 180 degrees in convection + grill mode for 30 minutes.
