Required products :

  • 1 tablespoon extra virgin olive oil
  • 3 pieces of sweet or hot sausage, cut into small cubes
  • 1 small onion, finely chopped
  • 1/2 cup quinoa
  • 1 cup water
  • 1 cup cherry tomatoes
  • 1 tablespoon fresh marjoram or 1 teaspoon dried
  • 4 medium-sized zucchini
  • salt and pepper to taste
  • 1/3 cup parmesan, grated

* A tea cup is used to measure the quantities.

Method of preparation :

Heat the olive oil in a large saucepan and fry the sausage and onion for about 5 minutes until the sausage changes color. Add the quinoa and water and bring to a boil, then reduce the heat, cover and cook, stirring once or twice, until the water is absorbed and the quinoa softens (15-20 minutes). Remove from the heat, add the tomatoes and oregano and stir.

Cut the zucchini in half lengthwise. Carve the inside, being careful not to carve the bark. Put the zucchini in a bowl, sprinkle with black pepper and salt, cover and heat in the microwave for 3-4 minutes to soften.

Place the oven rack in the upper third and heat to a high temperature. Transfer the zucchini to a pan, fill them with the quinoa mixture and sprinkle with grated Parmesan cheese. Bake until the cheese is melted and serve the stuffed zucchini with milk sauce if desired.
