How To Cook Summer Cake With Raspberries And Apricots - Recipe

Required products :

  • 50 grams of butter
  • 375 grams of apricots, cut in half
  • 100 grams of sugar + 1 teaspoon
  • 3 eggs
  • 100 grams of sifted white flour
  • 150 grams of raspberries
  • powdered sugar for sprinkling
  • vanilla ice cream or cream for serving (optional)

Method of preparation :

Turn the oven to 200 degrees, with a fan at 180.

Grease a square pan with grease and cover it with baking paper.

Melt half the butter, put the apricots and 1 tablespoon of sugar in it. Cook for 2-3 minutes, then remove from the heat and cool.

Melt the remaining oil in the microwave.

Beat the eggs with the sugar and, when a homogeneous mixture is obtained, add the flour, pour in the liquefied butter.

Put half of the apricots and raspberries in the prepared pan and pour the dough on top. Arrange the remaining fruit, if possible with the cut side up.

Bake for 30 minutes, until the dough is ready. Serve the dessert warm with a scoop of ice cream or cool completely and serve with cream.
