Required products :

  • 2 tea cups diced eggplant (about 1 piece)
  • 2 cups finely chopped onion
  • 1 cup corn kernels
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 500 grams of chicken
  • 2 tea cups finely chopped zucchini
  • 3 cloves garlic, mashed
  • 12 corn tortillas
  • 1 1/2 teaspoon red enchilada sauce
  • 2 tea cups grated yellow cheese
  • coriander and lemon for garnish and serving

Method of preparation :

Turn the oven to 220 degrees.

Grease two pans with olive oil or use cooking spray.

In a bowl put eggplant, onion, corn, 1 1/2 tablespoons olive oil, a pinch of salt and pepper. Stir and pour into one pan. Bake for 10 minutes on a higher level in the oven.

Meanwhile, mix the zucchini and chicken with the garlic, remaining olive oil, add salt and pepper. Stir and transfer to the second tray.

Transfer the eggplant pan to a lower level in the oven, and place the zucchini on high and bake for 15 minutes, until the meat is ready.

Transfer the meat to a plate and chop it, and mix the vegetables. Season with 1 tea cup of enchilada sauce. Reduce the oven temperature to 200 degrees.

Put the 6 tortillas on the bottom of a large pan, and on top put 1 1/2 tea cups of chicken mixed with vegetables and half a cup of cheese. Make 3 more layers like this. Finish with tortilla cakes, some yellow cheese and pour the remaining enchilada sauce.

Bake for 20-25 minutes. Refrigerate 10 minutes before serving.
