Required products :

  • 1.5 kg of watermelon (without peel and seeds)

 

Method of preparation :

Finely chop the watermelon and put it in an enamel dish, which is placed on low heat. Cook until the fruit releases its juice and begins to boil. Strain the watermelon mass. Return the syrup to the pan and cook over low heat until it thickens and darkens, stirring with a wooden spoon. Its shade will be almost black.

The finished sauce has a sour-sweet taste, similar to that of pomegranate, but the taste depends on the taste of the watermelon used. The color is determined by the duration of cooking (the longer it is, the more saturated the color will be).

The additive is used to flavor salads, meat and fish dishes.
