Heat olive oil and fry the ginger, lemongrass, curry paste for one minute. Slowly pour the broth, stirring constantly to dissolve the curry and not leave lumps.
Add the fish sauce and brown sugar, simmer for 15 minutes.
Pour the coconut milk, shaking the cans vigorously before opening it.
Add the mushrooms and cook until soft (about 5 minutes). Finally, add the shrimp and cook for 5 minutes.
Season with lemon juice, season with salt to taste and garnish with fresh coriander leaves.
