Required products :

  • 3 tablespoons cold pressed olive oil
  • 1 cup onion, cut into small cubes
  • 1 kg of potatoes, peeled and cut into cubes
  • 8 teaspoons chicken broth
  • 3 teaspoons salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon nutmeg
  • 1 tablespoon dried parsley
  • 3 tablespoons salted butter
  • 2 tablespoons flour
  • salt and freshly ground black pepper to taste

Method of preparation :

  • Heat olive oil in a large saucepan over medium heat.
  • Add the onion and saute for about 5 minutes until soft.
  • Add the potatoes and broth and after the mixture boils, reduce the heat.
  • Season with salt, red pepper, nutmeg and parsley. Stir.
  • Let the soup simmer for 10-15 minutes until the potatoes are fully cooked.
  • Remove the pan from the heat and puree to the desired consistency.
  • Melt the butter in a small saucepan or pan over medium heat.
  • Add the flour, stir and add 2 teaspoons of the soup.
  • Cook for about 2-3 minutes, until the mixture thickens slightly and pour it into the pan.
  • Heat the soup again and simmer on low heat for 2-3 minutes. Season with salt and pepper to taste, if necessary.
  • Serve the potato cream soup warm, garnished with grated yellow cheese or sprinkled with paprika and fresh parsley.
