The delicious tomato and almond pesto, served with wholemeal pasta, is a very tasty delicacy.

Required products :

  • 3/4 cup almonds, blanched and sliced
  • 800 grams of canned tomatoes
  • 400 grams of roasted canned tomatoes
  • 3/4 cup fresh basil leaves
  • 1 tablespoon + 1 teaspoon wine vinegar
  • 1/4 teaspoon crushed paprika
  • 3/4 cup extra virgin olive oil
  • 3/4 cup parmesan, grated
  • 1/2 teaspoon salt

Method of preparation :

Toast the almonds in a large dry pan until golden. Allow them to cool slightly and blend until fine powder. Add the tomatoes *, basil, vinegar and paprika. While the blender is running, pour a thin stream of olive oil, add parmesan and salt.

* You can prepare the pesto with 1.2 kg of fresh tomatoes. Cut them into quarters and arrange in a tray covered with baking paper. Bake for 30 minutes in an oven preheated to 200 degrees.

Serve the pesto with a meat or vegetable dish, and maybe with pasta.
