Chimol is an El Salvador salsa that requires minimal ingredients for its impressive taste. It is usually served as a side dish to grilled meat or tortilla filling. Pupusas is a great addition to corn cakes.

Required products :

  • 1 teaspoon tomatoes, cut into small cubes
  • 1 cup radish, cut into small cubes
  • 1 red onion, chopped
  • parsley, finely chopped
  • juice of 1 lime (lemon or vinegar)
  • salt to taste
  • flavored olive oil (or other fat)

Method of preparation :

Combine all ingredients and mix. Leave the sauce to stand for 30 minutes or a few hours in the refrigerator, then serve with stuffed pork loaves (Pupusas) if desired.
